The production of APEIROS High Phenolic EVOO is not left to chance. It is the result of strict adherence to agronomic protocols. We control every variable in the production chain—from the tree’s root system to the hermetic sealing of the bottle—with the sole purpose of maximizing and preserving polyphenols (Oleocanthal & Oleacein).

The name APEIROS—the first historically recorded name for the geographical region of Epirus—signifies the absolute locality of our raw material. The core of our activity is situated in the wider region of Arta. Specifically, our olive groves are strictly demarcated within the mountainous massif of Zygos, Arta, at an altitude of 500 meters, composing an absolutely controlled cultivation microclimate.
The selection of this specific altitude in mountainous Arta constitutes a technical parameter. The geomorphological characteristics of the wider macro-region, combined with enhanced winds and intense temperature fluctuations between day and night, induce physiological stress on the olive tree. As a biological response and defense mechanism against these mountainous conditions, the tree is forced to exponentially increase the synthesis of polyphenols. Consequently, the altitude acts as a natural multiplier of the fruit’s antioxidant indices.
Limited Reserve Production Model
Targeted Tree-by-Tree Management: We deliberately maintain a strictly limited number of olive trees. This allows for the micro-management of the grove and the continuous evaluation of the maturity index of each individual tree, ensuring harvest at the optimal phenological stage prior to the oxidative degradation of the fruit.
Rapid Harvest & Extraction Protocol: Waiting time causes oxidation. We implement a controlled, rapid harvest per individual estate. The fruit is immediately transported to the mill, where cold extraction and final bottling are completed on the same day, ensuring the absolute integrity of the phenolic profile.
Strictly Organic Inputs: The health of the tree and the synthesis of polyphenols are supported exclusively by certified organic nutrition formulations. We completely exclude chemical interventions (synthetic fertilizers/pesticides), ensuring a zero-residue fruit.
